Rub your lamb down with olive oil. Combine your salt, pepper, garlic, thyme and coriander then rub all over the lamb.<br \/>\nYou can then ideally put your roast in a bundt pan with the center coming up through the middle of the roast, but you may also roast your crown in a regular roasting tray.<br \/>\nPlace on the middle rack of your oven and roast for 30-35 minutes or 8-12 minutes per pound. Once the meat reaches an internal temperature of 130\u00b0 F, remove from oven and transfer to a wire cooling rack and tent in aluminum foil to let the meat rest for 20 minutes. While the meat is resting, add sherry vinegar, mustard and rosemary to the juices that accumulated in the pan and stir to combine. Taste and adjust as you wish.
