A large steak with distinctive flavor, our all-natural USDA Prime strip loin is easy to cook and comes from sustainable farms that are dedicated to humane practices. Its succulence, flavor and tenderness comes from our 21-day wet aging process, during which the meat tenderizes with its own juices and develops enhanced flavor. We never freeze it, never do anything that would harm its integrity. It’s hand cut from the front part of the short loin and features a triangle shape.
